Orange And Oregano Marinated Feta

The taste of oregano and oranges will transport you to the Mediterranean faster than a budget flight. This quick and delicious marinade from Unearthed is great for transforming feta.

Ingredients
300g Unearthed barrel aged feta, sliced in 2cm blocks
2 garlic cloves, crushed
6 tbsp olive oil
Small pack of oregano, finely chopped
Zest and juice of 1 orange

For the Tomato and Oregano Dressing;
2 large ripe tomatoes, skinned and very finely cubed
3 tbsp olive oil
1 shallot, peeled and grated
1 tsp runny honey
1 garlic clove, crushed
3 tbsp white wine vinegar
Small pack oregano, leaves only


Method
To make the tomato and oregano dressing, place all the ingredients in a bowl and mix well to combine. Season to taste.

To prepare the marinade for the feta, place the garlic, olive oil, oregano and orange juice and zest in a flat platter and arrange the feta cheese in it, making sure that it's covered in the marinade, turning round to coat both sides. Stand in the marinade for two hours.

Heat a heavy, non stick pan on medium to high heat and add the marinated feta cheese blocks, to saute on all sides until golden, about two to three minutes. Remove and drizzle with the tomato and oregano dressing.
