Cote d'lvoire - Mango Fool

While the football fans are glued to the TV, treat yourself with this delicious mango fool from the Hairy Bikers. To celebrate the World Cup, the chefs have teamed up with npower to create 32 recipes for each of the competing nations.

Serves: 6

Ingredients
3 large ripe mangoes, peeled (reserve some for decoration)
3 tbsp Cointreau or another orange liqueur of your choice
570 ml double cream (quantity optional)
mint sprigs for garnish

Method
Remove stone from mangoes. Put the flesh in a blender with the liqueur, blend to a puree.

Whip the cream until it holds its shape and spoon in to serving glasses with the puree.

Top with the remaining mango. Chill before serving and garnish with the mint.
