Sweet & Spicy Marinade

This is intense marinade combines warm spices and sweet honey to provide you with an aromatic treat. The marinade from Rachel's Organic is ideal for pork why not try with pork chops, ribs or with pork tenderloin or try it as a dipping sauce.

Serves 4 - 6

Ingredients

Half tsp ground cinnamon
1 tsp paprika
Quarter tsp chilli flakes
Half tsp ground mixed spice
Half tsp mustard seeds
1 garlic clove, finely chopped
1 shallot, finely chopped
2 tbsp tomato puree
60g Rachel's Greek Style Honey Bio Live Organic Yogurt
2 tbsp olive oil
1 tbsp honey

Method

Take all the spices and in a mortar and pestle or small bowl and crush together with the shallot and garlic. Add the remaining ingredients and mix thoroughly.

In a large bowl add the pork and tip over the marinade. Cover and chill for at least one hour - the longer you marinade the tastier the end result, ideally leave overnight!

Transfer to a pre-heated oven or barbeque on a hot grill until the meat is cooked through. Serve with a fresh green salad.
