Tomato and Chilli Lamb Grill Sticks

There's no reason to stick to the supermarket's BBQ offerings when it's so quick to create your own – these lamb grill sticks from www.eatwelshlamb.co.uk work just as well in the kitchen, if the weather's not up to barbecuing.

Serves 8

Ingredients
450g/1lb lean lamb mince
2 tomatoes, chopped
15ml/1tbsp tomato ketchup
1 red chilli, deseeded and finely chopped
Black pepper

Creamy Dip:
1 avocado pear, peeled, stoned and chopped
Quarter cucumber, thinly sliced
30ml/2tbsp fresh mint, chopped
45ml/3tbsp creme fraiche

Method
Place all ingredients together in a large bowl.

Thoroughly mix together and shape into long thin sausage shapes. Push wooden skewer through each grill stick. Place on grill pan and cook under a preheated grill or BBQ for approx 12 minutes until thoroughly cooked.

Mix the dip ingredients together, and serve lamb grill sticks with a dollop of the creamy dip in warmed garlic bread baguettes. Serve with a large green crunchy side salad.
